Eggplant "Pizza"
Dinner tonight: A Chicken Leg and the below featured Eggplant “Pizzas”. Simply slice up an eggplant and throw it on a cookie sheet (cover it with foil for easy clean up!) Put some tomato sauce, mozzarella cheese, and garlic salt on top. Stick it in the oven at 350 degrees for 30 minutes. Halfway through, I dropped some chicken on top for the heck of it. Quite tasty!!
